The School Nutrition Association held its annual conference in Utah on June 12, 2009 in at the Convention Center in Sandy, Utah. Dr. Silvana Martini was please to offer a short seminar to an enthusiastic and participatory group. The presentation titles “Can you Taste It”, summarized some the fundamentals of sensory science and sensory evaluation techniques used by industry.
To wrap up the theory with some practical fun, Martini asked the group to block their “sweet” taste receptors with a natural product called gymnema sylvestre by swirling in the mouth for a “long” 60 seconds. The group was then invited to taste table sugar, bubble gum, and a sour candy ….
… you had to be there to witness the expressions on the faces of those in attendance!
